Vegan or not this is a delicious option for your customers! The Lotus Biscoff range is hugely popular with the spread that can be added to your base and the crumbs and topping sauce to ripple through your layers giving a true Lotus flavouring throughout.
Ingredients
- 3000g Alpo Unsweetened Oat Milk
- 170g Elenka Nolat
- 30g Elenka Technoice
- 550g Sugar
- 150g Dextrose
- 400g Lotus Spread
- Lotus topping sauce
- Lotus biscuit crumbs (optional)
Method
- Mix dry ingredients (Elenka Nolat, Technoice, sugar dextrose) together, add to oat milk (for best results heat 1 litre of oat milk to 50C). Add Lotus spread and blend well.
- Let sit for at least 15 minutes and then add to batch machine.
- On extraction ripple Lotus topping sauce and Lotus crumbs through layers.
- Optional- to finish decorate with a few lotus biscuits and drizzle lotus topping.
