Raspberry Sorbet – Vegan Friendly

Elenka’s Raspberry paste is made from the flesh and juice of raspberries giving it a fresh and exquisite flavour. This teamed up with Elenka’s Nolat base provides a fantastic semi creamy sorbet but also a suitable vegan friendly alternative.

Ingredients

  • Hot Water (@50C) 2750ml
  • Elenka Raspberry paste 300g
  • Elenka Nolat 170g
  • Technoice (improver): 35g (Optional but makes smoother product that will last longer in display)
  • Dextrose 170g
  • Sugar 700g

Method

  1. Mix dry ingredients together with a spatula
  2. Add to hot water and blend with hand blender for a minute
  3. Add raspberry fruit paste and blend until smooth
  4. Preferably allow to stand for 10 mins- 1 hour (can be left overnight in fridge to mature)
  5. Add to batch machine
