Elenka Technoice – Powder Preparation
Technoice is an agent that increases volume, structure and emulsion. This agent binds the water, fat and air molecules together bringing more structure to gelato. It allows gelato to take in more air (overrun) and therefore produces more volume. It allows you to make mountain-like gelato presentations . It also eliminates excess water in sorbets. Its keeps Gelato creamy.
It is odorless and tasteless and can be used in hot or cold process.

Gelato recipe: 10g Technoice to 1lt white or fruit base mix
It can also be used in Pastry to make Sponge cakes, beignets, and biscuits
