Traditional pastes are used to flavour gelato, they can also be used in Pastry to give flavour to mousse, custard, patisserie creme, chantilly and heavy cream
Gelato Recipe: 100g of flavour per 1 lt of base mix
Pastry recipe: 90g of flavour per 1kg pastry or heavy cream
