This is Elenkas signature custard cream flavour . It is an egg enriched with Rum flavour (no alcohol) and scents of Sicilian lemons, oranges and mandarins.
It is used for Gelato, pastry creams, butter cream, chantilly, toppings and sponge cake.
Gelato Recipe: 30g of flavour per 1 lt of base mix – you can soak sponge cake with alcohol and mix through the gelato.
Pastry recipe: Shortcrust Biscottini: 100g Elenka Crema Pasticcera, 750g margarine, 400g sugar (add to mixer) then add 250g eggs, 30g of Zuppa Inglese and 1kg flour – Bake in the oven at 200 C for 18-20mins
