Elenka Base 786 – Powder Preparation
This is a mixture made from particular types of sugar whose characteristics are not to sweeten but to keep certain gelato flavours creamy instead of thick and hard. Works well on hard gelato such as chocolate, coffee, lemon, hazelnut, pistachio and others.
In pastry making, this product gives a long lasting softness to oven-baked products such as biscuits and sponge cakes, as it does not crystallize.
It is an odorless and tasteless industrial softener.

Gelato recipe: 30g of base 786 to 1lt of base mix
Pastry Recipe: replace 1000g of Saccharose with 100g of Base 786 and 900g of Saccharose
